SYDNEY MORNING HERALD 02/11/02 More deadly food found on shelves
Safety recalls for food consumer goods and therapeutic items have doubled in the past year costing more than 18million. In its annual report tabled to federal Parliament this week Food Standards Australia said a record 73 food safety recalls included microbacteria contamination risks rising from 17 to 28. The risks included deadly listeria and salmonella.

lorsque l'on met en place une démarche qualité sectorielle, les américains l'ont fait pour l'activité d'engraissement des bouvillons, on a certes au début de gros avantages financiers et puis il y a la crise...

De là à dire que c'est de la faute des américains, c'est une stratégie connue depuis la nuit des temps déni et renversement de la responsabilité.

De la part des américains, c'est petit, mais ce ne sont que bien peu d'américains qui osent utiliser ce type d'argumentaire .

Maintenant il y a aussi la question de l'education de notre système immunitaire. Je dois avoir indiquer un des rares travail qui pose le problème ,il y a peu de temps.

j'ai beaucoup aimé la phrase :

Plus sérieusement, votre remarque est juste : jusqu'où doit-on aller en hygiène, voir les souscripteurs à la théorie du même nom par analogie :

des radars automatiques, des doubles voies séparées, une limitation des vitesses, une automatisation progressive de la conduite... réduirait le nombre des accidentés de la route... jusqu"au jour où faute de pratique, les conducteurs devenaient moins bons et génèreraient des accidents, par par trop grande vitesse, mais par manque de pratique

On peut multiplier les exemples, il n'empêche qu'on gagne 3 mois d'espérance de vie tous les ans, qu'au début des années 1900 on était à environ 40 ans...

L'hygiène n'est pas une solution à tout : elle est la solution officielle depuis 1875 environ, ou un peu avant avec semmelweiss : il faudra être plus fin, bientôt, que ce que nous faisions jusqu'à présent ("tout détruire ") pour l'écologie microbienne

mais plus globalement, j'ai l'impression que toute analyse de risque (AMDEC, DU, HACCP, ...) est une opération de division, voire de dérivation : on dérive un problème, donc on le réduit fortement, mais, comme dans le paradoxe de Zénon, ce n'est pas en divisant qu'on arrive à 0.

Exact, le risque 0 n'existe pas, mais à combien faut'il le fixer ???,

c'est bizarre, il me semble qu'au niveau assurance, le risque est lié au dommage probable ( matériel, maladie, handicap, mort ) en alimentaire...
