Des épinards qui font verdir… les experts de colère

-- Au total, 199 personnes ont été infectées par la bactérie /E.coli 0157 :H7/ après avoir consommé des épinards frais. La moitié a dû être hospitalisée. Et une sur huit a même souffert d’un syndrome hémolytique et urémique
(SHU).

-« /La souche bactérienne en cause a été détectée dans des engrais fabriqués dans 4 fermes californiennes voisines/ ».

Donc, un compostage mal fait ( voir ensilage mal fait et ou utilisé en élevage ),

est-on sûr de vouloir savoir ?

mais on est face à la problématique de la primauté de la poule ou de l'oeuf. Dit autrement le compost suite à l'épandage a contaminé les wild pigs ( est-ce des sangliers? ) ou l'inverse.

L'énorme avantage de l'hypothèse wild pig, c'est surtout au niveau juridique, car si c'est res nullius et ou communis ...( voir influenza)

Maintenant , vu les guides de bonnes pratiques, notamment ceux liés au lavage des légumes en place aux Etats Unis et au Canada, ( voir archive ), la question que je n'avais pas posé est celle-ci :

les pathogènes sont sur ou dans les végétaux ?

je sais bien que le dogme est sur, mais alors il y a bien des procédures de maîtrise non en place . Une question: dans des pays comme les Etats Unis et le Canada les guides qui existent sont respectés ?

Dit autrement: il est ou le dossier concernant cet événement, présentant tous les faits de façon neutre et compréhensible ?

Selon mes infos,

un dossier a été fait par l'IFPA, nouvellement appelé UFPA (united Fresh Produce association, avec la FDA;

Contrairemnt à ce que pense beaucoup d'européens, la maitrise des risques au point de vue Hygiène et sécurité alimentaire est très developpée au Etats Unis et notamment en californie;

On trouve notamment danss les champs des toilettes mobiles, des ystèmes pour se laver les mains et les employés portent tous des charlottes;(enemble de mesures que je n'ai jamais vu en Europe) J'ai même vu en Espagne, les troupeaux de moutons venir manger les restes de salades dans les champs

Quand à la microbiologie des légumes frais prêts à l'emploi, il ne faut pas oublier que ce ne sont pas des produits stériles; Au mieux une bonne desinfection fait baisser de deux Log la flore totale, on passe de 10 puissance 7/g à 10 puissance 5/g en moyenne;

Dès lors le risque pathogène ne sera jamais absent et la dèsinfection en usine ne peut être qu'un paliatif;
Malgré ce triste évenement, les américains ont bien compris que le plus gros rique était dans les champs et non dans les usines,
