Un certain nombre d'organismes sont présents sur le marché français de 1a formation continue et de la mise en application de l'HACCP. Cette liste a pour objet d'offrir aux établissements de restauration la gamme la plus complète d'établissements répondant à leurs besoins en Ile de France.
Aucun critère de sélection qualitative n'a été utilisé pour effectuer ce recensement. La plupart des adresses proviennent de la presse professionnelle, d'informations recueillies auprès des professionnels clients de ces organismes et d'Internet. Il est vraisemblable que de nombreux organismes ne figurent pas encore sur cette liste.
