qui nous rappelle que les végétaux (germes de luzerne) sont également susceptibles de causer des TIAC.

Salmonella et E. coli O157:H7 : États-Unis

Le US Food and Drug Administration (FDA) réaffirme ses avis sanitaires selon lesquels les personnes qui présentent de hauts risques d'intoxication alimentaire grave devraient éviter de consommer des germes de luzerne crus. Cette réaffirmation constitue une mesure intérimaire en attendant la mise en place de méthodes d'intervention pour améliorer l'innocuité de ces produits. Les personnes à haut risque sont les enfants, les personnes âgées et les personnes ayant un système immunitaire déficient. Des conseils similaires ont été donnés par les Centers for Disease Control and Prevention après avoir signalé des foyers de E. coli O157H7 dans sa publication MMWR en août 1997. Depuis 1995, les germes crus apparaissent comme une source reconnue d'intoxication alimentaire aux États-Unis. La réaffirmation de ces avis par le FDA fait suite à une enquête récente effectuée par l'état de Californie sur 3 foyers de salmonella et de E. coli O157:H7 liés à la consommation de germes qui ont affecté environ 60 personnes. Le California Department of Health Services a émis un avis au niveau de l'état concernant les risques d'intoxication possibles pour les populations vulnérables en juillet 1998.

Voici un bel exemple de transparence efficace utilisé par le Département de Santé Publique de Los Angeles. Il s'agit d'un bulletin édité régulièrement dans le Los Angeles Times qui diffuse la liste des établissements fermés pour cause de danger pour la santé publique.

On y trouve toutes les informations utiles à la bonne compréhension du problème :

- nom et adresse de l'établissement;

- dates de fermeture et de réouverture;

- motifs de fermeture.

La plupart des établissements sont réouverts assez rapidement, d'où finalement une efficacité du système si les autorités locales restent objectives par rapport à l'amélioration réalisée (ni trop sévères, ni trop conciliantes).

Je crois que c'est également à Los Angeles qu'il existe un signe distinctif du type étoiles sur la devanture de chaque restaurant, permettant au consommateur de connaître le classement de celui-ci en fonction de l'hygiène. C'est un article paru il y a quelques mois déjà dans FS-NET qui en avait parlé.

Voici l'extrait du bulletin d'information du L.O Times. Je n'ai cité aucun nom d'établissement compte tenu du droit français à cet égard.
